Role of vacuum steps added before and after steaming treatment of maize starch. Impact on pasting, morphological and rheological properties

► Three hydrothermal processes were studied; DV-HMT, RP-HMT and DIC. ► Maize starch was treated by contact direct with steam at different pressure. ► The impact of treatments on morphological and rheological properties was considered. ► Results showed a low viscosity and yield stress with increasing process conditions. ► A complete fluidization of suspensions with a Newtonian behavior at high conditions.
