Abstract
► We demonstrate the use of bacterial cellulose nanocrystals (BCNCs) in improving the properties of gelatin based edible films. ► BCNC improves the mechanical and thermal properties of gelatin. ► BCNC even reduces the moisture affinity of gelatin.
