Abstract
⺠We demonstrate the use of bacterial cellulose nanocrystals (BCNCs) in improving the properties of gelatin based edible films. ⺠BCNC improves the mechanical and thermal properties of gelatin. ⺠BCNC even reduces the moisture affinity of gelatin.
