Abstract
⺠Ascorbyl palmitate-cyclodextrin inclusion complex (IC) has been developed as an oxygen scavenger. ⺠IC had better thermal stability than ascorbyl palmitate (AP). ⺠IC does not require a transition metal catalyst for oxygen scavenging reaction. ⺠IC had better oxygen scavenging capability than AP and iron powder at both 23 and 4 °C.
