Abstract
⺠Guar gum hydrolyzate was successfully esterified with oleic acid and n-octenyl succinic acid. ⺠Esterified guar gum hydrolyzate showed emulsification properties that were comparable to those of gum Arabic. ⺠Esterified gum Arabic itself showed superior emulsification property than that of its native form.
