Abstract
The good performance of sugars that form hydrated crystals (trehalose and raffinose) as stabilizing agents for labile biomaterials in dehydrated systems is related to the need of a relatively high amount of water to form the crystal, but not to the decreased water content or increased Tg of the amorphous phase.
