Abstract
⺠Active native and modified corn starch films with potassium sorbate were obtained. ⺠Developed films exhibited antimicrobial capacity against bacteria, yeast and molds. ⺠Active films allowed the controlled release of potassium sorbate to food surface. ⺠Active films were able to inhibit microbial growth, increasing food shelf life. ⺠Additive inclusion in the film matrix is more effective than conventional methods.
