Abstract
⺠We review the application of atomic force microscopy to lactic acid bacteria. ⺠This is a rapidly evolving research field with major biomed applications. ⺠Topographic imaging has enabled us to visualize cell surface structures. ⺠Force spectroscopy has been used to localize single cell surface constituents. ⺠A key challenge will be the use of high-speed instruments for live cell analysis.
