Abstract
► We review the application of atomic force microscopy to lactic acid bacteria. ► This is a rapidly evolving research field with major biomed applications. ► Topographic imaging has enabled us to visualize cell surface structures. ► Force spectroscopy has been used to localize single cell surface constituents. ► A key challenge will be the use of high-speed instruments for live cell analysis.
