Abstract
⺠A new method to quantify (â)-epicatechin metabolites was developed and validated. ⺠The method was applied to biological samples after consumption of dark chocolate. ⺠The most relevant metabolites were 3â²-glucuronide, 3â²-sulfate, and methyl sulfates. ⺠The entire metabolite profile of (â)-epicatechin is described.
