Abstract

The research and development of electrochemical biosensors applied to fermentation during the past 10 years were reviewed in this article. In the first part of the article, a brief introduction on electrochemical biosensors is given. Then, enzyme biosensors and microbial biosensors for common analytes in ferment processes, including glucose, lactic, alcohol and glycerol are described. Finally, the development trends of electrochemical biosensor are discussed.
