Abstract
⺠The activity of tyrosinase was activated with the tested ultrasound treatment. ⺠Large molecular groups of tyrosinase were broken into small ones by ultrasound. ⺠β-Sheet conformation was predominant in tyrosinase under ultrasound treatment. ⺠No oxytyrosinase was observed in tyrosinase under ultrasound treatment. ⺠Likelihood of the combination of substrate and enzyme was increased by ultrasound.
