Abstract
Polysaccharides production from wild edible BaChu mushroom was carried out using boiling water decoction. Response surface methodology (RSM), based on a five level, four variable central composite rotatable design (CCRD), was employed to obtain the best possible combination of extraction temperature, extraction time, particle size and ratio of water to mushroom for maximum polysaccharides production. The optimum extraction conditions were as follows: extraction temperature 94 °C, extraction time 10 h, particle size 33 and ratio of water to mushroom 6. Under these conditions, the experimental yield was 8.73%, which is well matched with the predictive yield.
