Abstract
⺠Nitrite from dietary products yields nitrating species in the acidic gastric lumen. ⺠Specific gastric protein mediators are targets for nitrite-derived nitrating agents. ⺠Gastric-nitrated lipids might exert local and systemic functions, upon absorption. ⺠Intragastric protein and lipid nitration may occur in vivo with functional impact.
