Abstract

•A new robust low-cost system to measure color of sunflower oil is developed.•The system performs fast, noninvasive and nondestructive in-line determinations.•Consideration of crossed absorptions and bubble scattering enhanced the results.•The system was installed in a processing plant and tested during several months.

Determination of color in oil is an important measurement to predict quality and acceptability of edible oil. The aim of this study was to develop and optimize a fast, inexpensive, noninvasive and nondestructive in-line method for determination and control of color in sunflower oil. Based on visible and near-infrared light analysis, the in-line measurements of oil in the Lovibond scale were performed in an oil stream of 30 m3/h and verified by means of visual and automatic colorimeters.
