Abstract
Type 2 diabetes can be prevented by adherence to a balanced diet rich in unrefined/minimally processed plant-based foods having preserved their initial food structure (source of slow carbohydrates) and a high nutritional density in protective bioactives (fiber, minerals, vitamins, polyphenols, and carotenoids). This profile is found in the Mediterranean diet. Whole grains, nuts, coffee, dairy products and legumes appear to be rather protective contrary to soft drinks and red/processed meat.
