Abstract
The impact of UV-B radiation on grape skin flavonoid and pulp amino acid biosynthesis was studied. The quantitative and qualitative profile of grape skin flavonols were modified by UV-B radiation, and the relative abundance of the different forms of flavonols changed proportionally to the applied dose of UV-B. UV-B also had an impact on grape berry amino acid metabolism in the berries.
