Abstract
												The paper describes the purification and kinetic, thermodynamic and functional characterisation of two low-temperature induced acidic endochitinases, a cold-adapted chitinase of 48 kDa and a chitinase of 24 kDa with potent antifungal activity, involved in the pre-defence response of chilling-sensitive cherimoyas during cold-storage.
