Abstract
⺠We purify and characterize plant coagulant from ginger rhizomes. ⺠The enzyme belongs to cysteine proteases. ⺠The purified enzyme shows higher milk clotting activity than calf rennet. ⺠The enzyme may have potential application as a rennet substitute.
