Abstract
⺠Gene transcription of ripening specific Actinidia ATs is controlled by ethylene. ⺠Two likely orthologous ATs exhibit benzoyl-CoA:alcohol O-acyltransferase activity. ⺠One phylogenetically distinct AT acts as acetyl-CoA:alcohol O-acyltransferase. ⺠AAT-substrate specificity and availability modulate kiwifruit ester profiles.
