Abstract
A Citrus paradisi glucosyltransferase was identified, cloned, expressed in an Escherichia coli system, and its biochemical function as a flavonol 3-O-glucosyltransferase established. The recombinant protein was subjected to thorough biochemical characterization and structure-function relationships were investigated.
