Abstract
Cultures of the ginseng root pathogen Pythium irregulare selectively metabolize 20(S)-protopanaxadiol ginsenosides (e.g., Rb1, Rb2, Rc and Rd) into a single compound, ginsenoside F2, via an extracellular glycosidase(s).
