Abstract
The effect of erythritol, xylitol and sorbitol on the monomeric collagen solution was evaluated with melting temperature, fluorescence studies, conformational stability and binding energy. Analysis of the results reveals that the stability of collagen increases as the number of carbon atoms in the polyols decreases. These polyols play an important role in the structural and conformational stability of collagen.
