Abstract
⺠Cr bioaccessibility from COPR determined using in vitro gastrointestinal extraction. ⺠Extent of Cr(VI) reduction varies with the presence of particular organic acids. ⺠Foodstuffs facilitate Cr(VI) reduction as evidenced by XANES and XRPD analysis. ⺠Cr(VI) present for periods of time during the digestion process. ⺠Area under concentrations-time curve integration improves bioaccessibility accuracy.
