Abstract
► Acrylamide-induced toxicity is closely related to oxidative stress in Caco-2 cells. ► Olive oil natural antioxidant HTy is able to decrease acrylamide-evoked toxicity. ► HTy improves cellular redox status and restrains apoptosis activated by acrylamide.
