Abstract
⺠Physical and sensory properties of cereal food boluses. ⺠Concept of swallowing threshold. ⺠Food bolus physical and related sensory properties are subject dependent on: individual swallowing threshold. ⺠Food boluses from different cereal type a range of visco-elastic properties suitable for swallowing and reach similar water content just before swallowing: product related swallowing threshold. ⺠The perception of fluidity could trigger swallowing.
