- Physicochemical behaviour of WPI emulsions was examined under in vitro digestion.
- Gastric conditions change the size and microstructure of the emulsions.
- Interfacial α-la and β-lg was proteolysed by pepsin in SGF.
- Digestion in SGF accelerated coalescence of the emulsions in subsequent SIF.
- Digestion in SGF had no pronounced influence on the lipolysis in subsequent SIF.
