Abstract
► Structural transitions were displayed by SEM micrographs with increasing concentrations. ► A change in the elemental composition of the gelatin particles surfaces with structural transitions was investigated. ► Effect of aggregate behavior of gelatin in aqueous solution on the grafting density of glycidol grafted gelatin polymers (GGG polymers) was analyzed. ► A theoretical basis to link aggregate structure with grafting density was provided.
