Abstract
⺠In situ analysis on the evolution of milk particle surface as drying processes. ⺠Mechanism of colloidal transport phenomena of fat and protein was further defined. ⺠Extension of single droplet drying technique to observe dissolution behaviour. ⺠Observation agrees with and provides explanation for industrial milk powders.
