Abstract
⺠As a cheap immobilzation method, some brewing/wine yeast can adhere to solid carriers. ⺠Different yeast adhesion intensities were observed and different mechanisms were hypothesized. ⺠Agreement between extended DLVO theory and experiments was found. ⺠Yeast adhesion was also estimated by quantification of FLO gene expression. ⺠Modeling and gene transcription can help to match suitable yeast and carriers.
