Abstract
► As a cheap immobilzation method, some brewing/wine yeast can adhere to solid carriers. ► Different yeast adhesion intensities were observed and different mechanisms were hypothesized. ► Agreement between extended DLVO theory and experiments was found. ► Yeast adhesion was also estimated by quantification of FLO gene expression. ► Modeling and gene transcription can help to match suitable yeast and carriers.
