Abstract
⺠We calculated moisture diffusivity values from DVS curves in regard with the particle size increase under the relative humidity ramp. ⺠We characterized for the first time (in the dairy powder field) the surface composition by various techniques: AFM, XPS, EDX and SEM. ⺠We related the moisture diffusivity values with powders microstructure and surface composition.
