Abstract
⺠pH range influence rhamnolipids emulsifying activity. ⺠In alkaline pH the emulsification and emulsion stability are greater. ⺠OH make up the electrical double layer, the micelles become more charged which increases the repulsion among them and decreases the coalescence phenomenon. ⺠Rhamnolipids could replace SDS in commercial applications.
