Abstract
►Subjects could perform a taste recognition memory test during fNIRS measurement. ►Bilateral prefrontal cortex was involved in taste recognition memory. ►Right lateralized PFC regions were more involved in recognition than encoding. ►PFC activation in taste memory was in line with the HERA model.
