Abstract
► Potential activation of sunflower protein films with phenolic compounds was studied. ► Phenolic compounds are naturally present in sunflower protein concentrates. ► These compounds conferred antioxidant properties to protein dispersions and films. ► These compounds did not confer antimicrobial properties to resulting protein films. ► Sunflower protein films can be used for protecting products susceptible to oxidation.
