Abstract
⺠Potential activation of sunflower protein films with phenolic compounds was studied. ⺠Phenolic compounds are naturally present in sunflower protein concentrates. ⺠These compounds conferred antioxidant properties to protein dispersions and films. ⺠These compounds did not confer antimicrobial properties to resulting protein films. ⺠Sunflower protein films can be used for protecting products susceptible to oxidation.
