Abstract
⺠Heat-denatured β-Lg - a novel nano delivery vehicle for EGCG in clear beverages. ⺠Good loading efficiency for the water soluble EGCG within β-Lg complexes. ⺠Lowering of the bitterness and astringency due to the protein-EGCG complexation. ⺠No significant changes to complexes after freeze drying and reconstitution. ⺠Enteric delivery potential due to very low release under simulated gastric conditions.
