Abstract
⺠We examine the effects of the heterogeneity on probe diffusion in κ-carrageenan gels. ⺠Probe diffusion in κ-carrageenan gels as seen by FRAP is compared to NMRd data. ⺠Combining FRAP, TEM and rheology gives insight to probe diffusion in κ-carrageenan. ⺠We provide insight to probe selection for FRAP.
