Abstract
► Pectin from Yuza pomace is extracted in chemical and eco-friendly (EF) ways. ► An EF extraction produces low methoxyl pectin with similar yield to chemical method. ► Both pectins exhibit shear-thinning property while EF pectin has lower viscosity. ► Chemically-extracted pectin gives higher thermo-mechanical properties than EF pectin.
