Abstract
⺠Pectin from Yuza pomace is extracted in chemical and eco-friendly (EF) ways. ⺠An EF extraction produces low methoxyl pectin with similar yield to chemical method. ⺠Both pectins exhibit shear-thinning property while EF pectin has lower viscosity. ⺠Chemically-extracted pectin gives higher thermo-mechanical properties than EF pectin.
