Abstract
⺠Chitin was recovered by lactic acid fermentation from shrimp shell waste. ⺠Factors influencing demineralization and deproteinization were studied by RSM. ⺠The results showed that incubation time had the main effect on demineralization. ⺠Concentration of reducing sugars was the most significant on deproteinization.
