Abstract
												⺠UF can be used in fractionation of whey proteins. ⺠Different protein concentration analyses do not give the same results. ⺠Also peptide concentration should be noticed. ⺠Very pure α-lactalbumin was obtained with the 30 and 50 kg molâ 1 cut-off membranes.
