Abstract
The goal of the study was to determine the influence of a model of drying shrinkage on the density distribution during apple slab drying on the basis of simulation tests. The Arbitrary Lagrange-Eulerian (ALE) method was used to enter a problem with moving boundaries. It was found that a model of drying shrinkage had a significant effect on simulated local density of the material. The study was performed using two shrinkage models described by the Poisson's equation. Model A assumed a linear shrinkage velocity profile in the apple slab, and model B assumed a strongly nonlinear shrinkage velocity profile.
