Abstract
Nanotechnology is a great innovation that is revolutionizing the agrofood industry. It is a science that works at the nanoscale and provides many benefits; however there are disadvantages and risks associated with its use. In this study, the fundamental concepts of nanotechnology are clarified, focusing on its primary applications and a health and environment risk assessment. An analysis of the international regulatory framework is carried out, with particular focus on the European Union (EU), while the importance and impact of nanotechnology on society is also examined.
