Abstract
⺠An effective alternative to sodium hypochlorite as a sanitizer was investigated. ⺠Neutral electrolyzed water (NEW) was comparable to NaClO in reducing bacteria. ⺠Bamboo and hardwood cutting boards responded similarly to the sanitization. ⺠NEW had similar effect on reducing gram negative and gram positive bacteria.
