Abstract
- SC-CO2 was used to extract ergothioneine and polyphenols from Pleurotus ostreatus.
- Effect of the factors was investigated by using response surface methodology.
- Ergothioneine was quantified and characterized by using HPLC followed by MS/MS.
- Optimized experimental conditions were 21 MPa, 48 °C and 133 ml (amount of co-solvent).
- Ergothioneine content vs. DPPH radical scavenging capacity had a R2 of 0.94.
