Abstract
► The current research is focused on enhanced-fluidity liquid extraction of anthocyanin from Andes Berry fruits using co-solvent. ► Andes Berry fruits from Colombia have a high anthocyanin content. ► In this study, simulations and experiments in order to obtain anthocyanin were conducted to evaluate the enhanced solvent extraction with supercritical CO2. ► The implementation of supercritical fluids extraction with co-solvent helps the solubility of anthocyanin and improves the yields.
