Abstract
This work aims to establish characteristic SDS-PAGE profiles of peanut seed albumins and prolamins associated with Aspergillus flavus resistance assay. Comparing to the traditional method, a successful alternate method was developed by sequential extraction with 2 M NaCl in buffer (pH 6.8), 70% ethanol and w ter. The alcohol-soluble prolamin fraction from the present method showed unique profiles possessing antifungal activity against spore germination and mycelial growth. The water-soluble albumin fraction had specific profiles and demonstrated inhibition only on mycelial growth. Yet, the salt-soluble globulin fraction enhanced both processes of A. flavus propagation.
