Abstract
► Contamination of dairy products by hazards is a major problem all around the world. ► FMEA method was applied for food safety assurance. ► Real data collected from food safety audits were used to implement the method. ► Intensive handling and malpractices were the main reasons for food safety failures. ► Applying FMEA in dairy reduced the safety failures approx. 80% for all processes.
