- There are slight differences between phase diagrams of unsaturated fatty acids.
- Unsaturated fatty acid destabilizes lamellar bilayer and favor H2, L2 and cubic phases.
- Cubic (Fd3m) and L2 phases do not exist in the presence of saturated palmitic acid.
- Kinetic stability of the systems is controlled by the unsaturation of fatty acids.
