Abstract
- Ovalbumin nanoparticles (OVAn) were obtained by heat treatment.
- Ovalbumin nanoparticles had around 100Â nm.
- Nanoparticles surface hydrophobicity was 6-8 folds greater than native ovalbumin.
- OVAn bind linoleic acid by mean of hydrophobic interactions.
- OVAn could be proposed for the development of PUFAs nanovehicles.
