Abstract
- The starch nanoparticles (SNPs) were prepared by isoamylolysis and recrystallization.
- There was an interaction between SNPs and bovine serum albumin (BSA).
- BSA could bind to SNPs and form a BSA-SNP complex.
- The BSA molecules were absorbed to the SNPs and formed BSA-SNP coronae.
- The SNPs induced structural changes in the secondary structure of BSA.
