Abstract
- Curcumin crystal size was reduced to nanoscale using nanonization.
- Protein β-lactoglobulin was used as surfactant to stabilize nanocrystals.
- Nanonization increased the aqueous solubility and stability of curcumin.
- β-lactoglobulin increase the bioavailability of curcumin.
