Abstract
- Milk samples with different fat globule size distributions were created with ultrasonic homogenization.
- The bulk optical properties (absorption, scattering and anisotropy) of the samples were measured for the 500-1900Â nm wavelength range.
- The size distribution of the fat globules and casein micelles were measured with laser light scattering, and used to simulate the bulk optical properties.
- Measured and simulated properties matched closely.
- This study stresses the potential of the sample's Vis/NIR scattering properties to estimate the particle size of the emulsified or suspended particles.
