Abstract
A model of substitution distribution in OSA-modified starches was proposed. Notably, OSA groups were located on each layer of amorphous region, as well as the channel and surface pores, resulting in the whole granule being modified heterogeneously. However, an obvious increase in concentration was presented at the central cavity of the granule.260
